TOMATO ZUCCHINI SCALLOP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cannon Estate in Arlington, Texas in 1992.
Ingredients:
2 small zucchini sliced
1 medium white onion sliced
2 small tomatoes peeled and sliced
1 cup plain croutons
1 tomato cut in wedges
1 cup sharp cheddar cheese shredded
1 teaspoon salt
1 teaspoon freshly ground black pepper
Directions:
1. In casserole layer half of the zucchini, onion, tomatoes and croutons.
2. Season with half of the salt and pepper then repeat layers and top with tomato wedges.
3. Cover and bake at 350 for 1 hour then uncover and sprinkle with cheese.
4. Return to oven until cheese melts.
