Once oagain I did not put quantities in as soups I cook according to the availability of ingredients and of course for how many people. If you don't feel like making your own vegtable stock, buy a good quality ready available vegtable stock BUT under no circumstances use cubes! Read more !!!! It takes a long time to cook but trust me it is devine and I cook huge quantities and freeze it in single portions.... nothing as nice as having a cuppa for comfort!
Ingredients:
vegtable stok (with lotsof carrots, onions and celery)
tomatoes (peeled and pips removed)
lentils
salt
pepper
cayenne pepper
* (this soup is even more exotic if you roast red peppers, liquidize and press through a sieve)
Directions:
1. Brew a vegtable stock with lots of carrots, onions and celery
2. Meawhile, put the tomatoes in hot water
3. Peel them and them in half and press most of the pips out.
4. Put aside
5. Throw the stock off and add the tomato peels and pips
6. Simmer for 2 hours, liquidize and press through a sieve
7. Add the tomato flesh and boil for another hour
8. Liquidize
9. * (if you are using red peppers add it at this stage, liquidize and press through a sieve before adding it to the tomato puree)
10. Add the lentils, salt and pepper and cayenne pepper Add one third stock, one third tomato puree and lentils and one third lentil water
11. Take care not to overcook when you the lentils since the water will become 'bitter'.
