A creamy tomato soup. Use canned tomatoes or fresh. For fresh tomatoes use approx 2-3 pounds.
Ingredients:
2 teaspoons olive oil
2 garlic cloves, minced
1 small onion, chopped
28 ounces canned tomatoes
5 cups chicken broth
1/2 cup uncooked oatmeal
1/2 teaspoon salt
1 teaspoon ground basil
1/4 teaspoon black pepper
1/4 cup skim milk
Directions:
1. Saute garlic and onion in olive oil in a large pot.
2. Add remaining ingredients except milk.
3. Cook 20-30 min if using canned tomatoes. For fresh tomatoes cook 30-60 minutes.
4. Add milk.
5. Puree with hand blender.
