Tomato Sauce - Simple and Quick!

This is a very simple, versatile tomato sauce. You can dress it up anyway you like, but try it before you mess with it, you might like it... By processing the onions, you get all the juice from them, they cook up quickly and your eyes do not cry as much. If I do not have fresh basil, I use the same amount of fresh oregano (which is a perennial where I live). I love to brown but under cook 5 Italian sausages, finish cooking them in the sauce for about 15 minutes and serve with pasta and some parmesan or romano cheese. Enjoy!
Ingredients:
3 tablespoons olive oil
2 medium onions, peeled, chopped into large chunks and finely chopped in a food processor
1/4 teaspoon hot red pepper flakes
1/4 teaspoon sugar
salt and pepper
6 garlic cloves, finely hand chopped
2 (28 ounce) cans plum tomatoes with juice, pureed in a blender
1 bay leaf
1/3 cup fresh basil, chopped (or fresh oregano)
salt and pepper
Directions:
1. Heat a medium sized heavy bottomed pot to medium and warm the olive oil.
2. Add the chopped onions, hot pepper flakes, sugar, salt and pepper and cook until soft, about 15 minutes - a little bit of brown is O.K. It adds some flavor!
3. Add the garlic, stir and cook for three minutes.
4. Taste the tomatoes to determine how much salt you want to add.
5. Add the pureed tomatoes, bay leaf, salt and pepper.
6. Bring to a boil, drop to a simmer and cook for 30 minutes.
7. Remove from the heat.
8. Add the chopped basil or oregano and stir.
9. Let sit for about 5 minutes.
10. Enjoy with what ever dish you are making!
