Tomato Salad With Olives and Onion

When tomatoes are in abundance here's a unique salad recipe you may want to try. The original came from Bon Appetit and suggested adding Feta. My family prefers Mozzarella so whatever cheese you want to use would be up to you, or leave it out altogether. Great summer-time tastes!
Ingredients:
5 large ripe tomatoes
1 small red onion
1/4 cup extra virgin olive oil
2 tablespoons balsamic vinegar
1/4 cup kalamata olive, pitted
pepper
Directions:
1. Cut the tomatoes into bite-size pieces.
2. Chop the onion.
3. Rough chop the olives.
4. Mix with olive oil and vinegar.
5. Season to taste with the pepper.
6. This is when you can add whatever cheese you like.
7. Let stand at room temperature and serve.
