This salad should be served with bread for dipping and soaking up the juices. It is best with a crispy italian bread.
Ingredients:
4-5 medium ripe juicy tomatoes chopped(locally grown are best)
2 cloves of garlic minced
a bunch of fresh basil chopped (about 1/3 cup)
1/3 cup olive oil (good quality - cold pressed)
1/2 teaspoon coarse salt
Directions:
1. Chop up tomatoes and put in large glass bowl, include any juices that remain on cutting board
2. Add in the garlic, basil, and salt. Pour olive oil over tomatoes and gently mix. Let sit and rest for at least 10 min. Serve with a crispy loaf of bread for dipping.
