This recipe came from an estate sale. I obtained it when I purchased the family collection from the Marcus Estate in Greenville, Texas in 1994.
Ingredients:
1 cup seeded finely chopped tomatoes
1/3 cup seeded finely chopped cucumber
1 medium avocado peeled pitted and chopped
1 tablespoon jalapeno seeded and chopped
1 tablespoon grated lime zest
1 tablespoon fresh lime juice
1 garlic clove finely chopped
3 tablespoons chopped fresh cilantro
1 -1/2 tablespoons chopped fresh mint
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Directions:
1. Place all ingredients in glass bowl and mix well then let stand 30 minutes.
2. Taste and adjust salt and pepper then refrigerate until needed.
3. Serve at room temperature using slotted spoon to drain excess liquid.
