Ingredients:
1 pint grape tomatoes, halved
1 tablespoon olive oil
2 tablespoons sugar
1 lemon, juice of
Directions:
1. Place everything in a saucepan over high heat. Bring to a boil, then reduce heat to medium-low and simmer 30 minutes, until most of the liquid has evaporated and the jam is quite thick.
2. Cool to room temperature before serving.
