Tomato Gazpacho

This is a very tasty soup and goes great with salad and/or a grilled cheese. I make this often when tomatoes are good and ripe. Especially good on a hot day. Enjoy
Ingredients:
3 slices french bread crust removed
1 pound ripe tomatoes skinned
1 english cucumber chopped
1 green pepper seeded and chopped
4 medium cloves garlic peeled and chopped
1/2 cup extra virgin olive oil
3 tablespoons sherry vinegar
1 teaspoon salt
garnish
1/4 cup diced tomato
1/4 cup bell pepper
1/4 cup diced white onion
1/4 cup cubed french bread
Directions:
1. Tear up bread and cover with cold water then allow to soak for 10 minutes.
2. Put the tomatoes, cucumber, bell pepper and garlic in a blender.
3. Pour bread and water mixture into a strainer and press out all excess moisture then add to blender and puree until smooth.
4. If soup is thick add enough water to give it the required consistency.
5. Pour soup through a fine sieve then season with salt, pepper and vinegar.
6. Place gazpacho in the refrigerator for at least one hour.
7. Serve cold with garnish ingredients arranged on top.
8. Drizzle with a little olive oil.
