This is a great side dish or for finger food use cherry tomatoes.
Ingredients:
6 small tomatoes
1/2 small cucumber
2 sticks of celery
2 spring onions
1/2 cup fresh parsley
1 tablespoon fresh mint
1 clove garlic
1/2 cup sunflower seeds
1 tbl spoon lemon juice
celtic salt to taste
Directions:
1. Cut tomatoes in half and scoop out the center
2. add tomato pulp to other ingredients and finely chop all ingredients
3. mix well and fill tomato halves
