Many say this is a great summer dish, but I find that I crave it ALL YEAR ROUND! Very addicting, goes with everything, very fast and easy, and always impresses with its amazing flavor!
Ingredients:
1 cup diced cucumber
1 cup diced fresh tomato
1/2 cup olive oil
1/2 cup red wine vinegar
1/4 cup diced red onion
1 teaspoon white pepper
1 teaspoon salt, or to taste
Directions:
1. Toss cucumber, tomato, olive oil, red wine vinegar, red onion, and white pepper together in a large bowl; season with salt. Refrigerate until slightly chilled, 10 to 15 minutes.
