Tomato Cucumber And Mushroom Salad

This is one of our favorite go to salads. Found this online a few years ago, and modified it somewhat. Easy easy, and so tasty. Allow to chill for about an hour, to let flavors meld together.
Ingredients:
1 large tomato
1 small cucumber
8 mushrooms
1 garlic clove
1 tablespoon olive oil
2 tablespoons vinegar -- red wine or balsamic
1/2 teaspoon oregano
*** i like to add some chopped red onion and parmesan cheese, too.
Directions:
1. Seed tomato and cut into coarse chunks.
2. Cut cucumber into coarse chunks.
3. Quarter mushrooms.
4. Crush garlic clove and stir in olive oil.
5. Add oregano.
6. Stir into vinegar.
7. Pour over tomato, cucumber and mushrooms.
8. Toss until well coated.
9. Cover and refrigerate for at least 1 hour before serving.
10. Add salt and pepper to taste.
