Tomato-bread Salad

This is a delightful duo of warm, fragrant bread, and tangy, cool tomatoes. It is perfect eaten right away while the bread is still warm, or is just as good served chilled, or at room temperature, after the flavors have blended. Read more . You can also add cubed cheese as a creamy compliment.
Ingredients:
1 medium sized tomato
extra virgin olive oil
basalmic vinegar
salt
pepper
2 slices of bread, cubed
1/2 teaspoon garlic
herbs of your choice
cubed mozzarella, or other cheese (optional)
Directions:
1. In a bowl combine a few dashes of olive oil, a few dashes of Basalmic, and some choice herbs.
2. Cut up the tomato into chunks of comparable size to the bread.
3. Toss tomatoes with dressing and set aside.
4. In a bowl combine garlic, 1 Tablespoon olive oil, and herbs. Mix well.
5. Toss cubed bread in OO mixture, turning to coat evenly.
6. In hot pan, saute bread until toasted and warm.
7. Immediately add to tomato mixture.
8. Salt and pepper to taste.
9. If desired, add cubed cheese.
10. Either eat, chill, or let set.
