this is my great granny's recipe. she used this recipe to use up her leftover stale homemade sourdough bread. regular bread will work but will not taste as good as sourdough bread
Ingredients:
6 slices sourdough bread, staled in oven or toasted in skillet, however you stale it, it must be as dry as possible.
1 medium to large yellow onion small dice
1/2 to 1 lb hickory smoked bacon
couple cloves fresh garlic minced
1 to 2 tbsp sugar
2 to 3 large cans diced tomatoes
Directions:
1. toast bread in oven at about 300
2. using kitchen sheers cut bacon into bits and saute until browned and crunchie
3. remove bacon bits from skillet and reserve about half the fat
4. add the onion and carmalize,
5. add garlic and sweat, remove onions and garlic set aside
6. crumble bread into bacon fat, you may add more fat it bread remains too dry,
7. turn up heat just before smoke point add the tomatoes juice and all, add the onions and garlic and bacon bits
8. add sugar, reduce heat and simmer about 20 minutes on medium low heat. salt (always kosher salt) and fresh ground black pepper to taste
9. this should be thick and not too juicy. so simmer until it thickens up.
