Low call high protein soup,
Ingredients:
28 oz canned tomatoes
14 oz black beans
1 cup onion
1 cup celery
4 carrots
2 cups water
1 potato
Directions:
1. combine onion, cleery, carrots and potato in 4 quart pot and simmer 40 minutes
2. add remaining ingredients and cook another 60 minutes
3. add neutral spices like basil, bay leaf, pepper
4. Add variety to this one by taking a serving or two and pureeing (sic) add 1 tbsp grated parmesan when it is hot, and just before serving.
