Tomato-Basil Soup

A quick and delicious alternative to canned tomato soup. Amazing with strombolis (as Cooking Light recommended) or with grilled cheese or just as a snack...
Ingredients:
1 tbsp olive oil
1 cup onion, chopped
6 garlic cloves
56 .5-ounce) cans whole tomatoes, no salt added
3/4 cup basil, fresh
4 tbsp fat free half and half
Directions:
1. Heat oil in saucepan.
2. Add onion anc garlic; saute 4 minutes or until onion is tender.
3. Add tomatoes, drained, and bring to a boil.
4. Cover, reduce heat, adn simmer 10 minutes.
5. Put mixture in blender (I prefer a submergeable handheld blender; otherwise it can be very dangerous as the mixture is hot). Add the basil leaves, half and half, and salt if you wish; process until smooth.
