This was requested by a friend of my DH for his birthday dinner. He is rather picky and he and my DH (even more picky) loved it. I had a difficult time finding a basic Tomato Basil Sauce recipe here on zaar. So I came up with my own after looking at several others. I used canned tomatoes because I did not have easy access to fresh, however, you can use fresh if you want. I also served over whole wheat penne pasta. I hope you enjoy!
Ingredients:
3 (28 ounce) cans diced tomatoes with juice or 8 lbs fresh tomatoes, seeded and diced
1 large onion
1/4-1/3 cup fresh basil, chopped
3 garlic cloves
1 teaspoon splenda sugar substitute
2 tablespoons olive oil
salt, to taste
pepper, to taste
Directions:
1. Drain the canned diced tomatoes, reserving the juice in a separate container.
2. In a large pot, saute the onions and garlic in olive oil until the onions are translucent.
3. Add the reserved juice to the pot along with the Splenda, salt and pepper. Allow to simmer until liquid is reduced to about half, about 30 minutes.
4. Add the diced tomatoes and chopped basil, and allow to simmer on low heat for 2 hours or until thickened.
