Using fresh basil leaves gives a wonderful fragrance to this sauce. I used petite diced tomatoes which I pulsed in my food processor, giving the sauce a semi-smooth texture.
Ingredients:
28 ounces canned tomatoes, petite diced
1/4 cup red onion, minced
4 tablespoons olive oil
2 -3 garlic cloves, minced
1/2 cup dry white wine
6 -7 fresh basil leaves, chopped
1/4 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup parmesan cheese
Directions:
1. Pulse tomatoes in a food processor until semi smooth.
2. Set aside.
3. In a sauce pan, add oil and heat over low heat.
4. Add onion and cook for 2-3 minutes.
5. Add minced garlic and cook for 1 minute only.
6. Add tomatoes, wine, basil leaves, dried basil, salt and pepper.
7. Cook over medium heat for 20 minutes.
8. Add Parmesan cheese and cook for 10 minutes more.
9. Serve over your favorite cooked pasta.
