Tomato, Avocado and Cilantro Salad With Southwestern Ranch

This is one of my husband and my favorite additions to any Mexican meal. This is a very fresh and fun salad. We call it Mexican caprese salad, because it is like a spin on the traditional Italian caprese salad. This looks beautiful on the plate - the colors are so vibrant! The taste is so fresh and wonderful!! You will wow your guests with this.
Ingredients:
4 large red ripe tomatoes (8 slices)
2 large avocados (8 slices)
1 purple onion (8 slices)
1 bunch cilantro (15 sprigs)
2 limes (juiced)
1/2 cup ranch dressing
1 teaspoon taco seasoning
1 teaspoon hot sauce (depending on taste)
Directions:
1. Start by making the dressing:
2. In a small bowl add half of the lime juice, ranch dressing, taco seasoning and hot sauce. Mix well. Chill in refrigerator while you make the salad. (add a few drops of water if the dressing seems to thick). Do not add the hot sauce if you do not like things spicy.
3. To prepare salad:
4. Slice tomatoes, avocado and onion. Add juice of half of the lime juice to the avocado to stop browning. Remove the cilantro from the stems. Alternate the tomato, avocado and onion across a long serving plate. Add the cilantro between each layer.
5. Take the salad dressing and drizzle over the top of the salad. Garnish with more cilantro.
6. Enjoy!
