Tomato Artichoke Bake

An unusual but, tasty side, easy to prepare. A nice addition for a one dish meal could be grilled chicken breast, crab meat or shrimp.
Ingredients:
1-14 oz can diced tomatoes, undrained
4 oz tomato sauce
1-14 oz can artichoke hearts, drained and quartered
1/2 c onions, finely chopped
2 t butter
2 t flour
1/2 tsp dijon mustard
1/2 tsp salt
1/2 tsp oregano
1/8 tsp thyme
1/4 tsp black pepper
2/3 c parmesan cheese (preferrably freshly grated)
Directions:
1. Preheat oven to 400°
2. Butter baking dish.
3. Melt butter in 2 qt. saucepan over low heat.
4. Add flour, mustard, salt, oregano, thyme, and pepper and stir.
5. Add tomatoes, sauce, artichokes, and onion and stir thoroughly. Pour into baking dish.
6. Sprinkle with Parmesan cheese.
7. Bake until top is golden brown, about 30 minutes.
8. Serve hot.
