Tomato and Thyme Fish

A tasty tomato sauce to go with any white fish.
Ingredients:
1 tablespoon olive oil
1 onion, chopped
1 (14 ounce) can chopped tomatoes
1 teaspoon light brown sugar
3 sprigs thyme, leaves stripped
1 tablespoon soy sauce
4 fillets white fish
Directions:
1. Heat the oil in a frying pan, add the onion then fry for 5-8 mins until just browned.
2. Stir in the tomatoes, sugar, thyme and soy. Simmer for 5 minutes.
3. Put the fish into the sauce.
4. Cover and gently cook for 8-10 mins until the fish flakes easily.
5. Serve.
