This is used in Italian meals very often. It is a wonderful combination of flavors and color! Sourdough is best for this but you can also use ciabatta... Recipe from Louise Pickford in Grilling ~ ~
Ingredients:
4 slices sourdoush bread, a little on the thick side
1. Grill bread until toasted on both sides. 2. Remove from grill. 3. Rub bread with garlic cloves. 4. Sprinkle with 2 tablespoons olive oil. 5. Allow bread to cool. 6. Cut into cubes. 7. Place the grilled bread into a large bowl. 8. Add the tomatoes and olives. 9. In a separate bowl mix the vinegar and remaining olive oil. 10. Pour over the salad. 11. Season salad with salt and pepper. 12. Stir well. 13. Allow salad to sit for 30 minutes to infuse the flavors. 14. Stir in basil leaves. 15. Serve.
