Tomato And Green Pepper Rice

A great way to serve rice. goes great with tomato and mozza stuffed chicken breasts
Ingredients:
1/2 green pepper
2 sliced tomatoes
1 clove garlic
1 tbls olive oil
3 tbls sundried tomato and oregano vinigrete dressing
1 cup uncooked rice
1/2 tsp cayenne pepper
1/2 a small onion
Directions:
1. Chop only half a pepper and all the onion in to small pieces.
2. fry the onion, garlic and pepper in the dressing and oil till soft.
3. add the tomato cayenne and continue to fry till tomato is mushy then set aside to cool.
4. cook rice as per package directions and add to the the other stuff.
5. lightly fry to heat and mix.
6. optional* serve in hallow green peppers.
