Tomato And Baby Marrow Quiche

A vegetarian dish almost like pizza, simple and nice
Ingredients:
1 roll puff pastry
150 grams baby marrows, shaved into ribbons
90 grams salad onions, finely chopped
250 grams cocktail tomatoes
100 grams danish feta, diced
1 dash salt and milled pepper
4 extra large eggs, beaten
1 cup sour cream, or cream
optional: add 200 grams chopped bacon and some crushed garlic.
Directions:
1. 1 Preheat oven to 180ÂșC.
2. 2 Line a 25cm loose-bottomed tart tin/ovenfroof dish with pastry.
3. 3 Blind bake tart for 10 minutes.
4. 4 Remove and allow to cool slightly.
5. 5 Scatter baby marrows, salad onions, tomatoes and feta over base. Season.
6. 6 Beat eggs and sour cream together and pour over filling.
7. 7 Bake for 20-25 minutes or until filling is set.
