Tofu Skillet Casserole Vegetarian

This is a fantastic quick meal! Very impressive.
Ingredients:
2 tbs oil
1 small chopped onion
one clove garlic, minced
1 block of tofu, crumbled up
3/4 cup tomato sauce
1/2 cup grated parmesan cheese
1/2 cup grated monterey jack cheese, or cheddar or the like
optional-you can add a chopped green pepper or some chopped fresh mushrooms with the onion if you like (or both!).
Directions:
1. Heat skillet and add oil.
2. Sautee the onion and garlic til soft (and other veggie if you're adding any...)
3. Add tofu and tomato sauce and stir.
4. Add Parmesan cheese and mix.
5. Sprinkle the jack cheese over the top and place the lid on the skillet, and immediately remove from heat.
6. Serve as is or sprinkled over noodles or rice.
