Tofu Scramble

This just a plain simple replacement for scrambled eggs. My own concoction taking what I liked of several recipes, and of course removing things like tree nuts from them.
Ingredients:
1 lb firm tofu
1 cup extra virgin olive oil
2 tablespoons soy sauce
2 tablespoons nutritional yeast flakes
2 teaspoons fresh thyme or 1 teaspoon dried thyme
1/2 teaspoon sea salt
1/8 teaspoon cayenne
1 teaspoon turmeric
Directions:
1. Heat oil in frying pan. Break the tofu into chunks in a hot pan. Then while stirring with spatula add Soy Sauce, Yeast Flakes, Thyme, Cayenne, and Salt. Mix well to combine; while breaking up tofu. Careful you don't pulverize it you want it to look like cooked scrambled eggs. Add Turmeric and stir until scramble takes on a nice yellow color and looks like scrambled eggs. Everything should be heated through at this point and you can serve it up as is, or with toast, or any way you like. You can even use it in other recipes too.
