Ingredients:
1 cup whole wheat flour
1 cup oatmeal
8 ounces soft tofu
2 eggs
1/4 cup oil
1/2 cup honey
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
2 teaspoons baking powder
1/4 teaspoon baking soda
Directions:
1. Mix first two ingredients in a large bowl and set aside.
2. Mix the remaining in a blender.
3. Pour the blended ingredients into the flour mixture.
4. Stir well.
5. Fill oiled muffin tins 2/3 full.
6. Bake at 425 degrees for 12-15 minutes.
