Tofu Cauliflower And Egg Casserole

DELICIOUS! Great as a main dish, and then a side the next night! Very filling comfort food. Serve with crusty buttered bread. WOW!
Ingredients:
1 block crumbled tofu
1 head cauliflower, cut into small pieces (i'm sure you can substitute frozen cauliflower or even broccoli)
5 hard boiled eggs, chopped
1/2 stick butter
1/2 cup flour
2 cups soy milk or milk
1 cup grated cheese-like monterey jack or cheddar
garlic, salt and pepper to taste
Directions:
1. In a casserole dish sprayed with non stick cooking spray or coated with oil or butter, combine your mashed tofu, chopped eggs and chopped cauliflower.
2. Season with the garlic, salt and pepper.
3. Meanwhile, in a small saucepan on top of the stove. combine 1/2 stick butter, 1/2 cup flour, milk and grated cheese.
4. Season with salt and pepper to taste.
5. Pour sauce over top of the cauliflower mixture.
6. Bake at 350ยบ for 40-45 mins.
