Tofu, Apple, Almond Pita Pocket

This was inspired by Chunky Apple and Almond Chicken Salad, a recipe by M&A's, one of my Spring 08 Pick-A-Chef adoptees. I use Basic Marinated and Baked Tofu for the tofu.
Ingredients:
16 ounces baked tofu, marinaded, baked, and crumbled
1 medium apple, diced small
1/4 cup almonds, sliced
2 tablespoons lemon juice
1 cup tofu mayonnaise
1 teaspoon fresh chives, chopped
1 tablespoon fresh parsley, chopped
Directions:
1. Cut up the apple and place into bowl.
2. Add lemon juice and stir to coat.
3. Add remaining ingredients and combine.
4. Serve in pita pockets.
