Tofu and Broccoli Gratin

Easy to make comfort food for any night of the week.
Ingredients:
200 g extra firm tofu, drained and water removed
1/2 cup broccoli
1/2 cooking onion, sliced
1 -2 tablespoon all-purpose flour
1 tablespoon unsalted butter
150 ml vegetable stock
200 ml low-fat milk
1/2 shredded cheddar cheese
salt
pepper
Directions:
1. Preheat oven to 375 degrees F. Spray two ramekins with low fat cooking spray.
2. Break up broccoli and divide tofu into 1 cubes and divide into ramekins.
3. Melt butter in nonstick pan over medium heat. Cook onions until soft. Add flour, constantly stirring, add vegetable stock and milk. Continue stirring until sauce thickens and turns light brown. Add salt and pepper to taste. Spoon sauce over tofu and broccoli, top with cheese and bake for 20 minutes.
4. Serve with green salad.
