This is a tasty alternative for vegans or non-ovo vegetarians. Play around with it to get the flavor you like.
Ingredients:
8 slice whole-wheat bread
2 cup firm tofu
2 tbsp diced white onion
2 tbsp dijon mustard
2 tbsp capers
1 tsp salt
1 tsp ground pepper
3 tbsp pickle relish
1 small tomato
1/4 cup of lettuce
1/2 tsp curry powder
Directions:
1. Prepare this the way you would egg salad. Just remember to squeeze your tofu until the consistancy is dry and crumbly. Also, I prefer to toast my bread.
