Toasted Vegan Avocado and Tomato Sandwich

Very simple and easy to make. I use a toaster oven to toast my sandwich but you could also grill it, put it in a skillet, or just toast the bagel or bread instead of the whole sandwich. You could easily add other ingredients depending on what you have on hand and your preferances.
Ingredients:
1 bagels, of your choice or 2 slices of your favorite bread
1 tablespoon vegan margarine or 1 tablespoon hummus, enough to spread on both sides
3 -4 slices avocados, depending on size of the bread
1 1/2-2 slices tomatoes, again, depending on size of the bread
Directions:
1. Seperate the bagel halves if using a bagel.
2. Spread evenly with vegan margarine or hummus.
3. Arrange the tomato and avacado slices on one side. I usually put the tomato on the bottom, it seems to stay together better.
4. Put the other side on top of the bottom half and place in the toaster oven until margarine melts or it's nice and crispy.
