Found this recipe in a 'Canadian Living' Magazine years ago and have been making it on a regular basis ever since. I usually serve it as an Appetizer but it'd be nice for lunch beside a big bowl of soup as well.
Ingredients:
1 large round loaf bread (sourdough/pumpernickel,etc.)
1/2 cup margarine
5 cups thinly sliced mushrooms
2 cups shredded mozzarella cheese
8 green onions, finely chopped
3 cloves garlic, minced
Directions:
1. Slice bread in half horizontally. With fingers, pull out about one-third of the soft bread, reserving for another use if you wish.
2. In bowl mix margarine together with the mushrooms, cheese, onions and garlic.
3. Spread on both cut sides of bread and place, cut side up, on baking sheet.
4. Bake in a 400F oven for 20-30 minutes or until crisp on the outside and the cheese is hot and melted.
5. Cut each piece of bread into 6 wedges.
6. Enjoy!
