Toasted Jalapeno, Tomatillo and Watermelon Salsa

Ingredients:
8 -10 medium tomatillos, skin removed, rinsed, and quartered
2 tablespoons vegetable oil
1 onion, minced
2 garlic cloves, minced
2 jalapeno peppers, seeded and chopped
1 tablespoon ground cumin
2 teaspoons mild chili powder
1 cup tomato sauce
1 cup watermelon, chunks
salt
pepper
Directions:
1. Heat oil in a large heavy saute pan over medium high heat.
2. Add onion and saute for a few minutes.
3. Add tomatillos, garlic, and jalapenos, saute until the onions and garlic begin to brown.
4. Reduce the heat to low and sprinkle cumin and chili powder over the pan.
5. Stir in tomato sauce and bring to a simmer.
6. Remove rom the heat and let cool.
7. Place the mixture in a blender or food precessor
8. Add watermelon and puree, season to taste with salt and pepper.
