Titanic 1st Class Menu: Parmentier and Boiled New Potatoes

Ingredients:
1 1/2 lbs potatoes
1 cup butter
1 tablespoon fresh parsley, chopped for garnish
1 1/2 lbs small red potatoes, skin on
1 lemon, zest of
butter, to taste
pepper, to taste
salt, to taste
Directions:
1. Parmentier Potatoes:.
2. Peel and cut the potatoes into small pieces, about 1cm (1/2 in) square.
3. Cook in melted butter.
4. Sprinkle with the chopped parsley as garnish.
5. Boiled New Potatoes:.
6. Boil potatoes in enough water to cover for approximately 10-minutes.
7. Before serving, add lemon zest, butter, salt and pepper to taste.
