I was tired of lettuce today and mixed this up - it was amazing. I'll also say that quite a bit of dressing was left, so it's even lower-cal than it looks.
Ingredients:
1 1/2 radishes
1/4 large green pepper
1 tomato, roma
1/4 small onion
1 oz neufchatel cheese
2 cloves garlic, roasted
1 tablespoon black pepper
1/4 teaspoon salt
1 teaspoon 2% milk
5 small olives
Directions:
1. Chop all veggies into bite-sized pieces.
2. Mash the garlic in with the cheese until it's pretty consistently blended.
3. Thin with milk, if desired.
4. Add salt, pepper, and any fresh herbs of your choice.
5. Pour dressing over veggies, and enjoy!
