Tipsy Laird (Lord) is another delicious Scottish dessert. Although it contains raspberries and whisky and of course cream, the same as Crannachan, this dessert is very similar to the English version of the Sherry Trifle. Read more . It is seen as a special dessert, often used on special occasions like Christmas or New Year, and certainly at a Burns Supper. It is deliciously sweet but less heavy than Clootie Dumpling or Christmas Pudding.
Ingredients:
1 sliced sponge cake
3/4 lb raspberry jam
1 wine glass of sherry
2 tablespoons whisky
home-made egg custard (see below)
3/4 lb raspberries
2 sliced bananas
1/2 pint whipped double cream
1 tbs sugar
toasted almonds
custard
1/2 pt milk
1/3 pt double cream
2 egg yolks
3 oz sugar
few drops of vanilla essence
Directions:
1. Place the sponge in the base of a large glass bowl and spread with the raspberry jam.
2. Mix the sherry and the whisky together and gently spread over the sponge until it is soaked in.
3. Add a layer of raspberries and sliced bananas.

7. Whisk the egg yolks, sugar and vanilla essence together until pale and creamy.
8. Heat the milk and cream together in a saucepan until boiling point then stir into the egg mixture.
9. When it is thoroughly blended, return to the pan and stir continuously over a low heat until the custard thickens.
10. Pour into a dish and allow to cool.
11. When the custard is cool, pour it over the layer of fruit, spreading evenly.
12. Add sugar to the whipped cream.
13. Cover the custard with the whipped cream.
14. Decorate with toasted almonds.
