Tipsy Fruit Fritters

Fritters wonderful anytime of day! I rembember these were the last thing I made my Oma the summer before she passed away. So these I dedicate to my Dudi! Love you.....
Ingredients:
4 baking of crisp tart eating apples;peel, core, cut in rings.
2 to 3tbs. cognac
3tbs. superfine sugar
1c. all-purpose flour
pinch of salt
2 eggs, separated
2/3c. milk
1tbs. vegetable oil
vegetable oil for deep-frying
powdered sugar
Directions:
1. In a shallow dish, mix cognac with 1/2 of sugar. Add apples, turning to coat. Let stand 30 minutes. Sift flour and salt into a large bowl and mix in remaining sugar. Make a well in center and drop in egg yolks. Using a wooken spoon, draw flour into yolks while gradually adding milk. Beat to a smooth batter, then let stand 30 minutes. In a separate bowl, whisk egg whites until stiff and fold into batter with 1tbs. oil.
2. Heat oil for deep frying to 385 F.
3. Drain fruit and dip each ring into batter to coat. Deep-fry a few at a time, turning once, until puffed up and golden-brown. Drain on paper towels. Sprinkle with powdered sugar. Serve hot... Enjoy.....
4. Variation; Use pineapple, pears or bananas in place of apples, soaking fruit in an appropriate liqueur 30 minutes.....
