A easy to prepare side dish and delish in flavor i tweaked this from 3 different recipes to my liking hope you will try i made it easter it was so good.........
Ingredients:
1 - stick of butter melted
1- box (8.5 ounce) jiffy corn bread mix
2-eggs
1- can cream of mushroom soup (26 ounces)
1 small can chopped green chiles drained
1- can cream style corn
1 can whole kernel corn drained....... or mexi corn
1- cup sour cream
1 - pound of mexican velveeta cheese melted
1- 1 1/2 cups of shredded mexican blend cheese..........i like alot of cheese on top use what you like..........
pepper to taste
Directions:
1. preheat oven to 350 degrees f.
2. prepare a 13x9 glass baking dish by lightly spraying it with a cooking oil.........
3. in a medium sized bowl mix the melted butter with corn bread mix and eggs and pepper.. until blended
4. add the corn . chiles, mushroom soup and sour cream, and melted mexican cheese...........
5. ...mix altogether until well blended.........
6. pour into the 9x13 pan .....
7. bake for 30 to 45 minutes or slightly longer depending on your oven
8. until done........
9. the last 5 minutes of baking add the shredded cheese over entire top and bake until melted.........
10. serves 16
