Ingredients:
12-14 ounces of lean beef chuck for stew.........
4- cups reduced sodium chicken broth
2- cups water
1- can ( 14.5 ounces) diced tomatoes with garlic and onion
1- small onion chopped
12- ounces- shitake mushrooms sliced
1- large turnip peeled and diced.(or you can use 2 potatoes)
2- large carrots , diced..............
1- cup barley ( not the quick cooking kind)................
2-- large shallots, chopped( about 1/2 cup)
2 celery stalks chopped
1/2- teaspoon pepper
1/2- teaspoon thyme
salt to taste
1/4- cup snipped fresh dill
Directions:
1. Sear beef until sightly brown..........then add to pot.....
2. mix all ingredients except fresh dill in a 4 quart or larger pot or you can use a slow cooker............
3. cover and cook on low 7-9 hours until beef and veggies are tender.
4. meal in one pot and delicious how easy is that !!!
5. to serve snip some fresh dill and add to each bowl or leave it off.............
6. serves 6 ............
7. now go buy some extra sour dough bread!! or make some great jalapeno cornbread or cornbread sticks yum .........
8. make a nice salad and get a glass of wine your choice .............
