A tangy-lemony delicious fish dish. Delicious served with angel hair pasta. You can also use this preparation for chicken breasts - just cook them longer!
Ingredients:
1 7/10 lb grouper
1/4 c flour
1 c white wine
1/2 c lemon juice
1/4 c capers
1 garlic clove
1 tbsp olive oil
Directions:
1. Dredge fish filets in flour.
2. Saute chopped garlic in olive oil for 30 seconds. Add fish and brown on both sides (about 3 min./side).
3. Remove fish and place on paper towel to drain.
4. Add lemon juice, wine and capers to pan. Simmer a few minutes until liquid is reduced by half.
5. Add fish back to pan and simmer 5-10 min.
6. Remove fish and place on platter. You can either pour the sauce over the fish, or add cooked angel hair to the pan and mix with the sauce. Serve the angel hair on the side of or under the fish filets.
