Thyme Pork With Apple-Cherry Compote

Ingredients:
2 cups diced peeled gala apple (about 2)
1 tablespoon fresh lemon juice
1 teaspoon chopped fresh thyme
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 (4-ounce) boneless center-cut pork loin chops (about 1/2 inch thick)
cooking spray
1/2 cup dry white wine
1/3 cup dried cherries
3 tablespoons brown sugar
1/8 teaspoon salt
1/8 teaspoon ground allspice
1/8 teaspoon ground cinnamon
1 tablespoon light butter
Directions:
1. Toss apple with lemon juice; set aside.
2. Combine thyme, salt, and pepper. Sprinkle over pork. Coat a large nonstick skillet with cooking spray, and place over medium heat. Add pork, and cook 3 minutes on each side or until done. Remove pork from pan; keep warm.
3. Add wine to pan; simmer 1 minute. Add apple, cherries, and next 4 ingredients. Cover and cook 6 minutes over low heat. Uncover and cook 1 to 2 minutes or until mixture is thick. Stir in butter. Serve over pork.
