Thuvia's Healthy Oatmeal Raisin Cookies

High-fiber, high-protein, gluten-free cookies! And they still manage to taste good.... Leave them in an airtight container overnight and they will be moist and delicious in the morning! Enjoy!!! :)
Ingredients:
1/2 cup dark brown sugar
2 egg whites
2/3 cup applesauce (unsweetened)
1 teaspoon vanilla
1 1/2 cups oat flour
1/4 cup nut flour
1 teaspoon baking soda
1/4 cup ground flax seed
2 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/4 cup whole flax seed
1 1/2 cups old-fashioned oatmeal
2/3 cup raisins
Directions:
1. Combine sugar and vanilla.
2. Add egg whites and applesauce.
3. Mix in flours, spices, baking soda and GROUND flaxseed.
4. Stir in oatmeal, raisins, and whole flaxseeds.
5. Drop on cookie sheets lined with parchment paper for easy removal. Flatten cookies with a fork.
6. Bake at 350 for 10 minutes.
