THREE VINEGAR VINE RIPENED TOMATO SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Byrd Estate in Cedar Hill, Texas in 1993.
Ingredients:
1 large ripe tomato
8 ounces blue cheese
1 teaspoon fresh basil leaves
three vinegar vinaigrette
1/3 cup sherry vinegar
1/3 cup balsamic vinegar
1/3 cup red wine vinegar
1 tablespoon dijon mustard
1 tablespoon sugar
1 tablespoon chopped shallots
1/2 tablespoon garlic
1 tablespoon chopped fresh parsley
1 tablespoon chopped sage
1 tablespoon chopped thyme
2 cups olive oil
Directions:
1. Mix all dressing ingredients together then slice tomato into 4 slices.
2. Arrange each slice on a plate and drizzle with the vinaigrette.
3. Crumble 2 ounces of the blue cheese into each serving and garnish with fresh basil leaves.
