Three Seed Snack Bars

A tasty healthy snack
Ingredients:
125 g pumpkin seeds
125 g sunflower seeds
250 g dates
100 g brown rice flour
300 ml water
1 egg
Directions:
1. Toast the seeds in a dry saucepan over a low heat for 5 minutes, stiring constantly.
2. Place the dates and 200ml water in a small pan, bring to boil and simmer for 10 until all the water is absorbed.
3. Mash the dates with a fork.
4. Place all the ingredients in a food mixer, including the remaining water, and blend until everything is well combined (or mix by hand).
5. Spoon the mixture into two round cake tins and smooth down.
6. Bake in the oven at 180 degrees for 30 mins.
7. Cut each tinfull into 5 so you have 10 bars.
8. The bars will keep for 1 week in a airtight container
