Ingredients:
1 cup quick-cooking oats
1/2 cup light brown sugar, packed
1/3 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup unsalted butter, melted
1/2 cup unsalted butter
2 (1 ounce) semi-sweet chocolate baking squares
1 cup granulated sugar
2 eggs, beaten
1/4 cup milk
2 teaspoons vanilla extract
2/3 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons unsalted butter, softened
1 (1 ounce) unsweetened chocolate square, melted
1 cup powdered sugar
1 tablespoon milk
3/4 teaspoon vanilla extract
Directions:
1. FOR THE CRUST ~ Preheat oven to 350 degrees F & grease a 9-inch square baking pan.
2. In a small mixing bowl, combine oats, brown sugar, flour, baking soda, salt & butter, beating on low speed until blended.
3. Press into the prepared baking pan & bake for 10 minutes.
4. FOR THE FILLING ~ Meanwhile, in a saucepan, melt the butter & chocolate over low heat, stirring until smooth.
5. Remove from heat & stir in the sugar, eggs, milk & vanilla.
6. In another bowl, whisk together the flour, baking soda & salt. Gradually stir this flour mixture into the chocolate mixture until smooth, then pour it over the baked crust.
7. Bake for 35 to 40 minutes or until the top springs back when lightly touched. Cool on a wire rack.
8. FOR THE FROSTING ~ When brownies have cooled, in a bowl, combine all 5 frosting ingredients, beating until smooth.
9. Frost the brownies, then let set for 20 to 30 minutes, before cutting into bars.
