From SELF Magazine, a quick protein-filled, microwavable egg breakfast. Can be made individually or for a group.
Ingredients:
4 eggs
4 tablespoons gruyere cheese, grated
1/2 cup marinara sauce
parsley, to garnish
Directions:
1. Crack 4 eggs into individual custard cups
2. Top each egg with 1 tbsp cheese and microwave together on high for 2 minutes.
3. Microwave the marinara sauce for 30 seconds and spoon 2 tbsp onto each egg.
4. Garnish with parsley and extra cheese
5. Serve 2 eggs per person with one slice of whole-wheat toast, if desired.
