Three Chile Chili

No better meal on a cold day than chili. This recipe is with whole and not chopped meat. Serve with jalapeno corn bread or tortilla chips.
Ingredients:
about 1 lb of cheap beef
3-6 strips of bacon
1 habanero
4-6 red jalapinos
1 yellow bell pepper
2 cans/ 3-5 tomatoes
2 cans of beans (same or variety)
1 large onion
chili spices
garlic
bay leaf
grated cheddar
Directions:
1. Chop peppers and onions
2. Use gloves to do this
3. cut your beef into small squares
4. Squish the tomatoes with your hands in a bowl add to pot with beans and spices.
5. Brown the bacon until it releases it's grease.
6. Remove the bacon to the pot.
7. Dump the onions into the pan and coat them with the bacon grease.
8. Make sure to stir the onions around, picking up all those lovely little bits of flavor that Emeril calls yum yums....and they are!
9. Once the onions are translucent, into the pot they go.
10. In your clean pan (thanks to the onions), add a little oil if you need it, then the beef.
11. Brown the beef. It needn't be fully cooked inside.
12. When it's all good and brown, put in pot. into the pot.
13. use the peppers as you did with the onions, to clean the pan.
14. Just do not inhale over the pan!
15. Add to pot and stir.
16. Add the bay leaves. .
17. simmer for at least 45 minutes to 3 hours
18. Add cheddar. No substitution as there is no other cheese allowed
