Three Cheese Quiche

This quiche has three types of cheese in it making it rich and custardy. It is very versatile. Any kind of meat, vegetable or herb can be added. I like it with spinach or asparagus. I've even fixed it with just fresh basil in it.
Ingredients:
1 (9 inch) unbaked pie shells
3 eggs
1/2 cup milk
1 teaspoon sugar
6 ounces cheddar cheese, grated
6 ounces monterey jack cheese, grated
8 ounces small curd cottage cheese
1/4 cup flour
3 tablespoons butter, room temperature
1 teaspoon baking powder
1/2 cup diced ham or 1/2 cup cooked bacon or 1/2 cup cooked sausage
Directions:
1. Beat together the eggs, milk and sugar.
2. Add the cheeses, flour, butter, baking powder and meat of your choice and mix well.
3. Pour into a 9-inch unbaking pie shell or quiche pan.
4. Bake in a preheated 400 degree oven for approximately 60 minutes.
5. If the crust starts getting too brown, wrap some foil around the crust.
