Three Cheese Bacon And Sage Mashed Potatoes

This is one of my favorite potato recipes ever. The blend of flavors is incredible. I got this recipe from a church friend who serves it every Sunday for family dinner. The cheeses, bacon and herbs in these potatoes are so good you won't be able to stop eating them. Read more . Yummy.
Ingredients:
2-1/2 pounds yukon gold baking potatoes peeled and cut into 1-1/2” chunks
3 tablespoons softened butter
1 cup shredded smoked gouda cheese
1 cup shredded sharp cheddar cheese
1 cup shredded swiss cheese
1/2 cup warm milk
4 slices bacon cooked until crisp and chopped
2 tablespoons chopped fresh sage
1 teaspoon salt
1 teaspoon freshly ground black pepper
additional shredded cheese for sprinkling on top
Directions:
1. Cook potatoes in large pot of boiling water until very tender.
2. Drain in colander.
3. Return potatoes to pot and mash with potato masher.
4. Stir in butter and cheese until combined.
5. Add milk to make a creamy consistency.
6. Stir in bacon and sage.
7. Season with salt and pepper.
8. Place in serving bowl and sprinkle with additional cheese.
